Quick potato soup

Peel and chop the potatoes and some of the carrots. Cut an onion into rings. Put some oil in a pan and fry the onion rings. Then add the chopped potatoes, carrots and a little bit of water (the vegetables should be slightly covered). Season everything with a little instant vegetable stock.

In the meantime, slice the mushrooms and 2 onions. Fry the mushrooms in a pan with some butter until they are golden brown. Roll the onion rings in salted flour and fry in vegetable oil until golden brown.

Mash the cooked potatoes and carrots with a potato masher. If the soup is still too thick, add some stock and season to taste with salt, pepper, plenty of marjoram, nutmeg and feta halloumi spice.

Pour the soup into a deep plate and garnish with fried mushrooms, onion rings and crushed tortilla chips.


Vegetarian burger with pumpkin fries

Cook the rice until al dente. Peel and finely shred the carrots. Peel the onion and cut into small cubes.

Make a homogeneous mixture from the cooled rice, grated carrots, finely chopped onions, grated cheese, eggs, frozen herbs, breadcrumbs and crushed tortilla chips. Season the mixture with salt, pepper and feta halloumi spice and leave to stand for approx. 30 minutes. Remove a few large leaves from the iceberg lettuce for the burgers.

In the meantime, halve the pumpkin, remove the seeds and cut into slices approx. 1 cm wide. Then remove the skin and season with salt, pepper, chicken seasoning and paprika. Place the pumpkin slices on a baking tray (with baking paper) and cook in the oven.

Prepare a salad from the Chinese cabbage, the remaining iceberg lettuce and the peppers. For the dressing, mix together the mustard, honey, vinegar and oil and season with salt and pepper.

Form patties from the burger mixture, dredge in breadcrumbs and fry in a pan with oil until golden brown. Then brown the burger buns on the cut side.

As everyone was supposed to top their own burger, the cucumber, gherkins, tomatoes and onions were cut into thin slices. Place everything in separate bowls on the table. Serve with the burger sauce, mustard, ketchup and processed cheese.

Place a burger bun on a plate and top with a lettuce leaf. Serve with the pumpkin fries.
