Peel the apples and cut into wedges. Caramelize the sugar in a pan, then add the apple wedges and cook. Flavor with cinnamon and lime juice.
Make a pancake pastry from curd, yoghurt, milk, spelt flour, sugar and a little bit of salt. Fry the pancakes in a pan with butter oil until they become golden brown on each side.
Squeeze the oranges and reduce the juice a little bit. Season with some whiskey, sugar and caramelized sugar (from the apple slices). Then thicken with some cornstarch.
Arrange a pancake and some apple slices on a plate. Pour the thickened orange juice into a schnapps glass and put it on the plate as well.
