Cut the puff pastry into rings and bake in the oven.
Peel, halve and slice the apples and kiwis. The pineapple peel and cut into pieces. The melon cut into wedges.
Caramelize sugar in a pan and deglaze with orange juice. Then add the apple slices and fry. Sprinkle with a little cinnamon. Take the apple slices from the pan. Then caramelize the pineapple pieces in the pan.
Cut the puff pastry in half and stack a tower with the fruits. Drizzle the tower with honey and icing sugar and serve with the melon and kiwi on a plate.
