Starters: Kumera differently

Peel the kumeras, cut into small pieces and cook them. Drain the canned apricots but keep the juice. Purée part of the apricot using a mixer. Mash the kumara after adding some butter and warm milk. Season to taste with salt, pepper, nutmeg and apricot juice.

Clean the white mushrooms and sear together with some onions that have been cut into small pieces. The boiled ham is spread with the cream cheese. Cut some apricots in stripes and decorate on the ham. Finally form rolls.

Decorate the puréed apricots in stripes on a plate. Place the mashes kumeras, the white mushrooms and the ham roll on the plate.
